Here is my take on a simple Guacamole, I like the combination with the red onion and red bell pepper, it adds a bit of a bit to the creamy sauce.
4 soft avocadoes
1 ½ lime (juice)
½ garlic (crushed)
1 medium red onion (finely chopped)
½ red bell pepper (finely chopped)
A couple of sprigs coriander and cilantro (finely chopped)
1 small fresh jalapeno pepper (sliced in very small rings)
- Slice avocados in half and discard the seed, scoop out of the shell with a spoon and place in bowl.
- To avoid browning immediately add the lime juice of one lime and mash into a half smooth/half chunky consistency.
- Now add the chopped onions, bell pepper, tomato, and cilantro. Mix in the remaining lime and stir gently to mix ingredients (keep a table spoon aside to add later as topping).
- Add salt to taste. Stir just slightly, add the topping and jalapeno pepper.
Serve with tortilla chips for a dip, or use with whatever favorite dish of yours.
