Breakfast bowls packed with vitamins - 3 quick ways

I love my early morning meals, it’s the most important one of your day. So why don’t you spoil yourself with something good!

 

I have Irritable Bowel Syndrome (IBS), and for me this means that high in fiber meals are the best to have. It will have the least irritable effect on my guts. I have discovered oats about 1,5 years ago and I can’t go without them anymore! It’s in my category of comfort food, warm, filling and delicious because of the many variations in topics (oats on themselves are just food to keep you alive). I have also come up with many variations and topics to give my oats that little umpf that it needs. Here are three of my favorites.

The Banaanaaaa - Banana, granola and cinnamon

Oats banana granola

Ingredients:

300 ml rice milk
3 tablespoons of oats
1/2 teaspoon cinnamon
half banana
2 tablespoons granola

Directions:

  1. Add the rice milk, cinnamon and oats in a small pot over a low heat for about 10 minutes and leave to simmer.
  2. Cut banana in slices and bake in a non-stick pan until lighly caramelized
  3. Add warm oats in a bowl, top with warm banana slices and granola

The Red Riding Hood - Red fruits (raspberries, blueberries, açai powder and chia seeds

Oats acai and berries

Ingredients:

300 ml rice milk
3 tablespoons of oats
2 tablespoons Açai powder
1 tablespoon (Frozen) raspberries
1 tablespoon (Frozen) blueberries

Directions:

  1. Add the rice milk and oats in a small pot over a low heat for about 10 minutes and leave to simmer.
  2. Once cooked, tranfer warm oats into a bowl and mix in the açai powder.  
  3. Top with raspberries and blueberries.

The Coco Loco - Raw chocolate powder, Coconut and puffed quinoa

Oats chocolate coconut

Ingredients:

300 ml rice milk
3 tablespoons of oats
1 tablespoon of raw cocao powder
1 tablespoon of Maple syrup 
 
1,5 tablespoon of puffed quinoa
1 tablespoon of coconut flakes

Directions:

  1. Add the rice milk, cocao powder and oats in a small pot over a low heat for about 10 minutes and leave to simmer.
  2. Once cooked, tranfer warm oats into a bowl and stirr in the maple syrup and top with puffed quinoa and raw coconut flakes.
